Beetroot Dip

I went to the Stirling Markets on Sunday morning and bought some fresh goat’s curd. Here’s what I made with it.

Beetroot Dip

  • 3 smallish beets, boiled and peeled
  • 2 tablespoons of walnuts
  • 1-2 tablespoons of goat’s curd
  • Clove garlic – crushed
  • 1/2-1 lemon squeezed
  • Splodge of olive oil.

Blend (I used my trusty stick blender) and enjoy.

I think it would be also be nice with garlic chives.
