A super easy and quick recipe to knock up on a school night.
- 2 chicken thighs, cut into chunks
- 1 onion, sliced
- 1 garlic clove, sliced
- Few sprigs of fresh thyme
- Few sage leaves
- 1 bay leaf
- 1 teaspoon of smoked paprika
- 1/2 zucchini, chopped
- 4 yellow squash, chopped
- 1 capsicum, chopped
- Handful of cherry tomatoes, halved
- 1 tin tomatoes
In a heavy based pan, lightly saute the onion and garlic in olive oil (I put the lid on to let them sweat a little).
Once softened, add the herbs and spices and give them a stir.
Add the rest of your ingredients with some salt and pepper and stir well to combine all ingredients.
Put the lid on and cook gently for 20-30 minutes until the chicken is cooked through (I like my veggies a little firm).
