I went to the Stirling Markets on Sunday morning and bought some fresh goat’s curd. Here’s what I made with it.
Beetroot Dip
- 3 smallish beets, boiled and peeled
- 2 tablespoons of walnuts
- 1-2 tablespoons of goat’s curd
- Clove garlic – crushed
- 1/2-1 lemon squeezed
- Splodge of olive oil.
Blend (I used my trusty stick blender) and enjoy.
I think it would be also be nice with garlic chives.
