I love beetroot and this salad is a winner. I make it on Sunday and eat it through the week.
- 2 medium beetroot – grated
- 3 carrots – grated
- 1/2 red onion – finely sliced
Add seeds and nuts as you wish. This one has:
- Pine nuts
- Sesame seeds
- Pepitas
- Sunflower seeds
All dry roasted (do not use non-stick)
I then added
- Hemp seeds
- Chia seeds
- A splodge of olive oil
- A drizzle of Balsamic
- Salt to taste.
